 Zucchini Skillet Dinner | How To Cook Budget Meals

I wanted to create a series of budget meals to share how to stretch a dollar when it comes to meals for the family. Over the years I have made many of the meals for my family and they really enjoy and love them. The zucchini skillet dinner will be the first budget meal that I will share with you. It is a healthy, low carb and very easy on the wallet.

Of course, little ones may be a little picky and not particularly care for zucchini. Adding noodles instead of the zucchini was a great option for my teen and preschooler boys. This made the meal stretch so much farther. Plenty for an entire crew or leftovers to take to work the next day. For the zucchini dinner you will need the following below:

Ingredients:

Ground Turkey 1 lb – Aldi

Zucchini – 1 – 1 and half

Pasta Sauce – 1 jar

Seasoned with:
onion powder
garlic salt
garlic powder
black pepper
minced onion

Optional:

Mozzarella 

 Noodles (elbow macaroni); instead zucchini add noodles if kids do not care for zucchini (for the second half  of the 2.25lbs)

Price Breakdown:

2 Meals In One
All from Aldi:
$5.99 Ground Turkey 2.25 lbs, or $3.99 1.25 lbs
$1.99 Mozzarella Shredded Cheese
$1.29 Fresh Zucchini
$1.00 for (2) .49 cents jar of pasta sauce, Normally .89 or .99 cents

Directions:

  1. Brown ground turkey with medium heat until done.
  2. Seasoned ground turkey with desired seasonings such as onion powder, garlic powder or garlic salt, black pepper, Italian seasoning, parsley or etc.
  3. Clean zucchini thoroughly, ( I like to use vinegar and water to clean my veggies)
  4.  Thinly slice the zucchini
  5. Place zucchini in the brown ground turkey mixture turkey and stir together.
  6. Cook for 1-3 minutes and then add pasta sauce jars to the mixture
  7. Cook on a low simmer for 15-20 minutes until the zucchini is tender or at desired texture
  8. Once done add mozzarella shredded cheese to top it off.
  9. And serve! Dinner is done

You can add a veggie side if desired.
